1 1/2 Cup Fresh Basil
1/3 Cup Olive Oil
1 Cup Pine Nuts (or soaked almonds)
5 Cloves of Garlic
Juice from 1/2 a Lemon
Salt to Taste
Handful of Cherry Tomatoes
Instructions on how to prepare:
First I spiralized the zucchinis. If you do not have a spiralizer you can use a vegetable peeler.
Then place the noodles into a large bowl.
Next using a food processor blend all of the other ingredients together to make the pesto. You can also use a Vitamix blender using the tamper to mix as well. It should look like it does in this picture. After the pesto is mixed add to the zucchini and stir evenly. Cut cherry tomatoes in half and mix in with the pasta. Enjoy!
